This wonderfully delicious soup is not only one of the healthiest you can eat but also tastes great! The combination of kale and broccoli offers a plethora of essential nutrients such as vitamin A and C. It is a quick and convenient way to get all your vitamins and minerals. No need to get those preservative infested canned soups anymore, this simple soup will leave you feeling healthy and energetic!

The blend of kale and broccoli also offers several health benefits including:

 

  • Cancer prevention - via the presence of 10-15 different glucosinolates
  • Lowered risk of cataracts - due to high levels of carotenoids
  • Protection against emphysema
  • Huge amounts of Vitamin A

Here's the recipe

Yields 6 - 8                                                                                 

  • 2 heads of kale
  • 2 heads of broccoli
  • 1 carrot (diced)
  • 2 celery stalks (diced)
  • 1 onion (diced)
  • 4 cloves of garlic (diced)
  • 4 cups of chicken broth

 

In a large pot, sauté garlic, onion, carrot, and celery until lightly browned. Add broccoli and kale. Pour in 4 cups of boiling chicken broth and cover. Simmer for 45 minutes or until vegetables are soft. Puree and enjoy!
